Holiday Cookie Recipes: Start a Tradition

Gingersnap Thumbprint cookies DOUGH: 2: Make the cranberry apricot filling: Place jam in a small bowl. If there are any large pieces of apricot chucks pull them out and chop into fine pieces and add back into the bowl. Add cranberries. Set aside. 3: Mix the gingersnap thumbprints: Mix the flour, spices and salt together in a medium bowl. Stir in crystallized ginger, taking care to break apart any pieces that may be clinging to one another. Set aside   Place the butter and sugar I the bowl of an electric mixer fitted with a paddle attachment, Beat on medium speed until light and fluffy, about 1 to 2 minutes. Baking cookies is a tradition and an art for St. Louisan Julia Usher, author of the "Cookie Swap" and "The Ultimate Cookie" cookbooks.

Julia Usher is one smart cookie, especially when it comes to baking Christmas cookies.  “I love to bake Christmas cookies, but cookie-baking and cookie swaps are something I think people should do all year round,” said Usher, of Webster Groves, whose love for cookies served as the inspiration for her two cookie cookbooks, The Cookie Swap and her latest release, The Ultimate Cookie, both published by Gibbs Smith Publishing. Usher began commercially baking cookies and other sweet delights after relocating to St Louis several years ago. She opened a confection company here after working first as a a Yale educated engineer. Winter Wonderland: Tilles Park Shines With the Spirit of the Season

Open until New Year’s Day, visitors can enjoy an entire mile of holiday magic.

Now in its 26th year, the Winter Wonderland in Tilles Park boasts more than 1 million twinkling lights, making it a magnet for families from around metro St. Louis.  “It’s a family tradition,” said Justin Hirsch, special events coordinator for St. Louis County Parks Department. Whether this is your first year to visit the Winter Wonderland or your 26th, you will find holiday scenes new and old. “The display changes every year,” Hirsch said. New and traditional sights New this year is a series of Christmas trees with lights that are synchronized to music. Roast Beef Recipes for the Holidays

Recipes for roasted beef shoulder; spicy buffalo meatballs; and mediterranean beef & olive pissaladiere.

The following recipes are courtesy of the Beef Check-off website, where you’ll find more holiday recipes and cooking tips to make the remainder of your holiday entertaining easy. Roasted Beef Shoulder Tender Crostini 1: Heat oven to 425 degrees. Press pepper evenly onto beef roasts. 2: Place roasts on rack in shallow roasting pan. Do not add water or cover. Roast for 20–25 minutes for medium rare to medium doneness. Remove roasts when the internal temperature reaches 145 degrees on an instant-read thermometer when inserted into the thickest part of the beef.
